Recipe(tried): Easy Meatloaf (using stuffing mix)

I love meatloaf, but I don't have a lot of time to chop things! This recipe gives all the flavor of traditional meatloaf with a little shortcut. My family and I love it. Hope you enjoy!

EASY MEATLOAF

1 1/2 lbs. of ground beef
1/2 lb. of ground pork (This is a must!)
1 (6 oz.) package of herb flavored stuffing mix, crushed in the bag
1 cup water
1 egg
1/2 cup bbq sauce, divided use

Preheat the oven to 375 degrees F.

Combine the first five ingredients and 1/4 cup of bbq sauce in a large bowl and mix with your hands. (I like to put quart-size baggies on to make clean-up easier, but I still wash my hands, though.) Place meat mixture in a loaf pan. Top with remaining bbq sauce.

Cook in the preheated oven for 30 minutes. Drain off any fat that has accumulated in the bottom of the pan. Cook for 30 more minutes. Remove and let rest for 5 minutes. Slice and enjoy. Also makes great meatloaf sandwiches.
