Recipe(tried): Egg McMommies

Breakfast and Brunch
This was a favorite of my boys when they were growing up. You need an egg poaching pan with round cups for this, mine is made by RevereWare.

EGG MCMOMMIE'S

FOR 1 SERVING YOU'LL NEED:
1 English Muffin, split & lightly toasted
1 tsp. butter
1 large egg
1 tsp. water
pinch salt & pepper
1 Tbsp. finely chopped ham, or cooked bacon bits
1 slice American cheese, or 1-2 Tbsp. favorite shredded cheese

Put about 1 inch of water into bottom of egg poaching pan & set insert on top. Bring water to a boil.

Meanwhile, in a small bowl beat egg, water, salt & pepper with a fork, stir in the ham or bacon bits.

Melt the tsp. butter in egg cup in poaching pan. Pour in egg mixture, cover. Lower heat to a simmer & cook about 3 minutes, until egg is done.

Remove from pan & place egg patty onto toasted muffin, top with cheese & top of muffin.

***a bit of mayo, mustard, or catsup can be spread on muffin if desired.
