FOR THE TUNA MARINADE:
1 cup soy sauce
1/2 cup water
2 tbsp honey
1 tbsp sugar
1 tbsp minced garlic
2 tsp minced fresh ginger
1 tbsp ground fresh chiles
3 tbsp chopped fresh basil
2 tbsp chopped cilantro
2 tbsp chopped green onion
2 tbsp toasted sesame seeds
Mix all ingredients for the marinade in a bowl and set aside.
FOR THE MARINATED TUNA:
1 pound Sashimi grade tuna, diced 1/4-inch
1/2 pound cucumber - diced
1/2 cup tuna Marinade
Toss all ingredients and allow to marinate 10 minutes.
TO ASSEMBLE:
In a 3-inch ring mold, layer the following:
Fresh Avocado
marinated tuna
Press gently to compact. Remove the ring mold.
Drizzle a tablespoon of the marinade over the stack.
Using a squeeze bottle, lace wasabi mayo (1 cup mayo/1 tbsp wasabi powder) over the stack.
Serve with toasted tortilla triangle that have been brushed with the marinade.
