Apricot Nut Quick Bread
1 (16 slice) loaf

1 pkg.Pillsbury Nut Quick Bread Mix
1 c. chopped dried apricots
1/4 tsp. ginger
3/4 c. water
2/3 c. sour cream
2 eggs

Preheat oven to 350 degrees.Grease & flour bottom only of 8 x 4 inch or 9 x 5 inch loaf pan.
In large bowl combine all ingredients, stir 50-75 strokes or till dry particles are moistened. Pour into greased & floured pan. Bake at 350 degrees for 60-70 minutes or till done. Cool 15 minutes,remove from pan. Cool completely. Wrap tightly & store in fridge.
