Recipe: Eggs Poached in Pork and Beans

Hey Molly,
hubby's been Hogging the computer today, so I just logged on... The way to fix it is..

just open your pork n beans (I'm picky for Van Kamp's) LOL add about 1/2 cup water in a 10-inch teflon skillet is what I use...

then after they come to a boil, turn the heat down, crack your eggs onto the beans (no more than 3 eggs to one medium size can of beans) (not the big fat can!) and put a lid on them, turn down low low low and let them "poach".

Sometimes If I feel like having poach eggs ELEGANTE!! I'll fry and crumble some crispy bacon on top.

You can check after about 3 minutes to see how your eggs look. This is a comfort food for me, just eaten with plain ole loaf bread (fresh, the kind that sticks to the roof of your mouth!!!)
