Recipe: Ham and Asparagus Quiche

HAM AND ASPARAGUS QUICHE

1 cup cooked diced ham
1 lb. fresh asparagus, trimmed to 4-inch pieces (OR 1 (10 oz.) pkg. frozen asparagus spears)
1 cup shredded Swiss cheese
3 eggs
1 cup light cream or half & half,
1/4 tsp. salt
dash of pepper
1/2 tsp. dried parsley

Preheat oven to 375 degrees F. Spray a 9-inch quiche dish or heavy ceramic pie plate with non-stick cooking spray.

Place the ham cubes in the bottom of the dish. Arrange asparagus spears on top. Sprinkle the shredded Swiss cheese over the asparagus.

Beat the eggs, cream, salt and pepper together until well blended. Pour over the other ingredients. Sprinkle parsley over top.

Bake in a preheated oven at 375 degrees F for 30 to 40 minutes or until set.
