Recipe(tried): Elegant Double Nut English Toffee Candy (like Almond Roca) - Wednesday was Valentine's Day....

Wednesday was Valentine's Day and I did not post at all due to the running around of errands. Our local supermarket had rib-eye steaks shaped into hearts. I picked those up along with some shrimp and salad ingredients. For desssert, I made my DH Elegant Double Nut English Toffee Candy.
Here is the entire Valentine's Day Menu:
Shrimp Cocktail for Two
Grilled Garlic Rubbed Rib-Eye Steaks
Creamed Spinach
Baked Potato (for DH)
Mixed Greens Salad with Mandarins and Feta Cheese

Elegant Double Nut English Toffee Candy
This is exactly like Almond Roca. This is easy to make and fun too!!
Makes 3 lbs. of candy...I kept one pound for DH and gave the other two pounds to two super neighbors. Even one pound is too much, so DH took his to the office today.
1 cup crushed almonds
1 cup chopped pecans
2 sticks (1 cup) butter
1 1/2 cups sugar
1/2 tsp. vanilla
3 Tbsp. water
3 Tbsp. lite corn syrup
11 oz. chopped semi-sweet chocolate pieces
1. Butter a 12x18-inch baking pan. Set aside.
2. Place chocolate in a double-boiler and melt, meanwhile, start preapring the toffee....
3. Combine butter, sugar, vanilla, water, corn syrup in a heavy saucepan, stirring constantly over med-high heat, bring to a boil. It should gently boil for 15 minutes or til the candy thermometer registers 300. Pour immediately into the prepared buttered pan and spread evenly. Sprinkle 1 c. chopped pecans over evenly. Let sit on sounter for 3 minutes, then put pan in fridge to cool completely, about 10 minutes.
4. Pour melted chocolate over spreading evenly and then sprinkle the crushed almonds all over. Let harden in fridge for 20 minutes.
5. With a knife crack the candy, arrange the pieces in a pretty container and wrap in red or any holiday cellophane paper...tie with a pretty ribbon.
