Recipe(tried): Ellie-Try this one

Here is a repost of a recipe from a while back. This is the one I use. If it's too soggy maybe you're using too many bananas. If I want it more moist I add sliced strawberries or blueberries to the batter. I sometimes add some chopped nuts. Try it! You'll like it!

Fat Free Banana Bread


This is one of the best fat free banana bread recipes I've found. It contains no salt and you won't even miss it.

Fat Free Banana Bread

1 cup sugar
1/2 cup unsweetened applesauce
1 tsp vanilla
1/2 cup egg substitute
3 ripe bananas, mashed
2 cups flour
1 tsp. soda

Preheat oven to 350 degrees.

Stir flour, sugar, and soda together in a large bowl. In a separate bowl mix together applesauce, vanilla, and mashed bananas. Make a well in the dry ingredients. Pour in banana mixture and blend until thoroughly mixed. Batter does not have to be completely smooth. Pour into a loaf pan sprayed with cooking spray. Bake 1 hour or until done. Remove loaf from pan while still warm. Cut into 20 slices, 1 slice per serving.
