ISO: chicken fingers , banana bread help

I would really appreciate any advice re: a very good banana bread recipe using apple sauce(rather than oil)..I tried one off the internet which was very wet inside. Also, any ideas re: chicken finger seasonings.....I have a great way of making chicken fingers but need ideas re: seasonings...nothing exotic. My sweetheart loves them with plum sauce, so we don't need alot of spices, but I tend to make them too salty or too plain . Any ideas would be greatly appreciated. Thank you, ......E.
