SWEET POTATO TACOS
6 large sweet potatoes, peeled, cooked and sliced 1/4-inch thick
8 (6-inch) blue corn tortillas
1 cup grated Monterey Jack cheese
1 cup grated white Cheddar cheese
1/4 cup chopped fresh cilantro
1/4 cup honey
Salt and pepper to taste
Olive oil
Prepare a charcoal grill and burn down to embers. Lay 3 slices of sweet potato over half of the tortilla, sprinkle with cheeses, cilantro and honey, and season with salt and pepper. Fold over tortilla and brush with olive oil.
Grill on each side for 3 minutes until crisp.
Makes 8 servings
