Recipe: Beta Boost (smoothie using carrot juice, blender)

"This drink is rich in beta-carotene, which the body uses to make vitamin A."

1 cup diced mango
1 cup chilled carrot juice
1 cup frozen unsweetened quartered strawberries
1/3 cup chopped red bell pepper

Combine mango and carrot juice in a blender. Add strawberries and bell pepper. Blend until smooth.

Makes about 2 1/2 cups (2 servings)

Per serving: 132 calories, 2g protein, 1g fat (0g saturated), 32g carbohydrates, 39mg sodium, 0mg cholesterol, 5g dietary fiber.
