ENCHILADA CASSEROLE
1 lb. hamburger
1/2 medium onion, chopped
1 packet taco seasoning mix
1 can enchilada sauce
4 corn tortillas
2 cups of grated cheese (may use less, my family is likes it very cheesy)
Brown hamburger meat and onion in skillet, drain and add taco seasoning as directed.
In an 8x8-inch baking dish or pan pour enough enchilada sauce to cover bottom of pan.
Cut 2 of the tortillas in half, lay them in the bottom of the pan with cut edges to sides of pan. Pour the rest of the enchilada sauce in meat mixture. Put half of meat mixture on top of the tortillas and cover with half of the cheese. Then do one more layer of tortillas, then meat, and then the last of the cheese.
Bake for about 15 to 20 minutes in a 350 degree F oven.
