Escarole, Beans and Pork Rib Soup

Serves 8

2 lbs escarole
2 cans cannellini beans, undrained
1 large chopped onion
2 Tbsp tomato paste
Salt/pepper
2 lbs country style pork ribs
2 qts chicken broth
1 Tbsp olive oil
red pepper/optional

Use large pot, coat with olive oil and lightly brown pork ribs. Add onion and saute. Add broth, tomato paste and seasonings and cook 1 hour. Wash escarole well, cut in large pieces, cook for 3 minutes in boiling water. Drain but reserve some water. Add escarole and beans to soup. Add extra escarole water if needed. Simmer for several minutes.
