Recipe(tried): Famous Wellfleet Shortcake...

There are two kinds of shortcake:- sweet cake-like and old-fashioned biscuit type. This is a famous old-fashioned biscuit type served for many years at the Wellfleet strawberry festival on Cape Cod.
Famous Wellfleet Shortcake (serves 12; can be halved)

4 cups flour, unsifted
4 Tblsp. sugar
2 Tblsp, baking powder
2 tsp. salt
2/3 cup vegetable shortening or margarine
2 cups milk

Combine all dry ingredients and cut in shortening to the consistency of cornmeal. Add milk and STIR ONLY ENOUGH TO BLEND or it will be tough!
Pat into greased 9" by 13" pan and bake at 450 degrees for approximately 15 minutes. Best served warm with sugared berries and whipped real cream. Very old-fashioned and tender!
