Recipe(tried): Fish Cakes and a grand welcome!

I appreciate the gracious welcomes from all. I live in central New Hampshire on a small lake. I love to cook New England, Cajun, Portuguese, and Spanish dishes. I am anxious to share. Here goes my first:

Yummy Fish Patties

1 1/2 pounds fish, haddock or cod, steamed or nuked, flaked, and cooled off

1 cup frozen baby peas

1/2 cup fresh carrot sticks in a bag

1/3 cup finely chopped minced sweet onion, Vidalia is great

1tbsp Dijon mustard

1/4 tsp garlic powder

1/4 tsp pepper

1/8 tsp cayenne

1 egg

2 tbsp low fat mayo

1/2 cup flour

1 cup instant potato flakes, recommend the butter/herb instant potatoes in the bag

Lite virgin olive oil

Beat the egg well in a medium bowl. Add the Dijon, spices, and mayo. Blend well with a whisk. Add in the veggies and flour till well mixed. Lightly fold in the flaked fish. Add fish cooking water if too dry. All potato flakes should be invisible, but mixture should have a fairly dry texture.

Heat 1/4 inch lite olive oil on med-high. Make cakes with about a third cup of batter, balling them in your hands and then flattening to about 3/4 of an inch. Fry appx 3 minutes per side till golden brown on each side.
