Recipe: Foil-Roasted Onions

Foil-Roasted Onions
Makes 8 servings

8 medium red onions -- peeled
1 cup dry stuffing mix -- prepared
1/2 stick butter
1/4 teaspoon dry thyme leaves
2 tablespoons chopped parsley

With sharp knife scoop out onion centers.
Finely chop centers, and measure 1/4 cup.
In small bowl toss prepared stuffing mix with chopped onion and remaining ingredients.
Fill cavity of each onion with about 2 tablespoons stuffing.

Lightly each onion in heavy duty foil. Roast on grill, 3 to 4 inches from preheated coals, about 40 minutes or until tender.
