I like to dice up my peppers, then put the pieces in plastic ice-cube trays, fill with water,then freeze. After the cubes are frozen, I pop them out and put into ziptop freezer bags. Each cube is about 1/4 cup diced. When I want to use them, I just put however many cubes I want into a strainer and run under cold water for a moment. Just like fresh, diced peppers!
