I don't think this is the same, but this is one of our favorite family get together foods. We start by frying the potatoes, does not work the same with frozen fries. We then make a roux, brown flour in fat, add water and the cooked potatoes, salt and pepper to taste, and cook down. We eat this over hot biscuits with cane syrup. Growing up, bacon fat was used to cook the potatoes in and make the roux with.
