Recipe: French Vanilla Pudding (coconut and pudding layered dessert using instant pudding mix)

FRENCH VANILLA PUDDING

2 cups flour
2 cups coconut
1 cup soft butter
1/2 cup sugar
2 small or 1 large box of instant vanilla pudding mix
3 1/2 cups cold milk
1 (8 oz.) container of Cool Whip, thawed

Mix first four ingredients together and spread thin on a shallow pan.

Bake at 350 degrees until brown (careful not to burn). Stir occasionally. Set aside to cool.

Prepare pudding according to directions on the box but use the reduced amount of milk; set aside.

Crumble cooled coconut mixture. Use one half as bottom layer in a 9x12-inch pan.

Pour pudding over bottom layer. Spread Cool Whip over pudding. Top with remaining half of flour/coconut mixture. Keep refrigerated.
