Recipe: Fresh Apple Cake (tube cake, might be Sara Spano's)

I have learned that Sara Spano was the Food Editor for the Columbus Georgia, Columbus Ledger-Enquirer Newspaper and just have found a recipe for Fresh Apple Cake issued by Ledger-Enquirer, however, no credit is given to Ms. Spano. - Gay R.

FRESH APPLE CAKE

2 cups sugar
1 1/2 cups canola oil
2 eggs
1 tablespoon vanilla
3 cups sifted all-purpose flour
1 1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
3 cups chopped apples
1/2 cup chopped nuts

Preheat oven to 350 degrees F. Grease and flour a tube pan.

Mix sugar and oil together, then add eggs and vanilla. Mix well; set aside.

Sift the dry ingredients together and add to the wet ingredients; mix well. Add the apples and nuts. Stir.

Bake in the tube pan for 1 hour and 15 minutes. Remove from oven and let cool for 1 hour, them remove from the pan. Do not allow to stay in pan for longer than 1 hour because it will be hard to remove.

Makes 1 tube cake
