FRESH STRAWBERRY CAKE
4 eggs
3/4 cup oil
3/4 cup strawberry juice or water to make 3/4 cup
1/2 cup strawberries fresh or frozen "drained'
1 box (2-layer size) white cake mix
1 small (3 oz) box strawberry jello
Strawberry Icing (recipe follows)
Preheat oven to 350 degrees F. Grease a 13x9x2-inch baking pan.
Mix eggs and oil together and then add juice, berries and mix well. Add the dry cake mix and dry jello and mix to get as many lumps as you can. Pour into prepared pan.
Bake at 350. Start checking at 30 minutes and cook until done. It is best to cook in a pan you leave the cake in.
STRAWBERRY ICING:
1 (1 lb) box confectioner's sugar
1 stick (1/2 cup) margarine, softened
1/2 cup drained strawberries
1/4 tsp vanilla
Mix together and ice while cake is warm. Not hot but warm.
It has the best color for the Christmas Holidays. Every time I make it I think of my mom. She gave me this recipe when I was first married.
