Recipe: Fried Corn Cakes

Fried Corn Cakes

serves 4

1 1/2 canned cups whole corn kernels, drained
3 tablespoons flour
2 tablespoons milk
1/2 teaspoon salt
1 egg, well beaten or 1/4 cup Eggbeaters
5-6 strips of crisp fired bacon, crumbled or chopped kielbasa, about 2 oz
bacon grease for frying or Pam Spray.

Combine flour, milk, salt and egg, Beat until smooth and thoroughly blended. Add the corn meal and bacon, and mix well. Drop from spoon into hot bacon grease and fry till golden brown on both sides.

If using Pam Spray, lower the heat and cook slower, adding more spray if needed.
