Recipe: Mediterranean Grilled Veggies

Mediterranean Grilled Veggies

1 small eggplant or zucchini, chunked
1 medium onion cut into wedges
1/2 lb whole mushrooms
2 cups cherry tomatoes
1 small red pepper, chunked
1 small green pepper, chunked

MARINADE
6 tbsp. olive oil
2 tbsp balsamic vinegar
1 tbsp soy sauce
2 to 3 garlic cloves, minced
1/4 cup fresh basil

Prepare veggies. Whisk together marinade ing. In large bowl toss all veggies except tomatoes with marinade. Marinade at least 1 hour (can be made the day before or in the morning for use at night and refrigerated). Grill in grilling basket or on skewers, stirring or turning frequently for about 15 minutes. Add tomatoes and grill 5 minutes longer or until veggies are desired consistency.
