Fried Rice for One

Here's a great way to use leftover meat.
Fried Rice
Makes One Serving
1/2 cup steamed rice, see below
1 tlbs olive oil
1 tsp soy sauce
1 green onion, sliced
1 egg
1/4 cup (more or less) minced cooked meats such as beef, ham, chicken, bacon, sausage or shrimp
Heat oil in an 8-inch skillet. Add steamed rice.
Stir-fry until rice is hot and mixed with oil.
Add soy sauce; mix well; stir in green onion.
Push rice to side of skillet.
Break egg into skillet and quickly scramble with a fork.
As egg sets, stir gently to let uncooked egg flow underneath.
Stir cooked egg into rice, breaking egg into small pieces.
Stir in minced cooked meats. Heat through.

Place water and rice in small saucepan. Bring to boil.
Reduce heat to a very low simmer. Cover tightly; cook 15 minutes.
Do not lift lid during cooking. It can't steam without the steam.
Remove from heat and let sit 5 or 10 minutes longer.
Fluff with fork.
