9 eggs
2 Tbsp. milk
1/2 tsp. salt
1/2 cup grated Cheddar cheese, shredded
2 cups finely chopped fresh spinach
1/2 cup minced parsley
1/2 cup finely chopped onion
1 clove garlic, minced
2 Tbsp. vegetable oil
1/2 cup green peppers
1/2 cup red peppers

Beat egg slightly. Mix in remaining ingredients, except oil. Heat oil in heavy medium skillet. Pour in the egg mixture; cook over low heat. When mixture begins to set at bottom and sides, lift cooked portions with spatula and turn gently to cook evenly. Serve on heated platter.

6-8 servings.
