Recipe: Frozen Cherry Salad

Frozen Cherry Salad

1 (16 oz.) can dark sweet cherries
8 3/4 oz. can crushed pineapple
1 (11 oz.) can Mandarin oranges
1 (8 oz.) pkg. cream cheese
1 c. sour cream
1/4 tsp. salt
2 c. miniature marshmallows
1/2 c. pecans, chopped

Drain the fruits and reserve a few cherries and orange segments for garnish. Soften cream cheese at room temperature. Beat until fluffy and blend in sour cream, sugar and salt. Fold in fruits, marshmallows and pecans. Pour into 8 1/2 x 4 1/2-inch loaf pan and freeze overnight. Unmold and garnish. Serves 8 to 10.
