Recipe(tried): Fruit Pizza Cookies

I made the sugar cookies bases ahead & froze them, made the glaze and cream cheese mixture ahead & chilled them, & sliced all the fruit up the night before and chilled it in separate containers. I made sure the assembly of the cookies was the ONLY thing left to do the morning of the party, as I know from experience with over a dozen Christmas Cookie Exchanges that you should only have ONE project left then, especially if the party starts at noon or 1pm and the family photos are planned for 11am! Other things always come up and you HAVE to be organized to have 50 people in your home!!

Fruit Pizza Cookies

60-70 Sugar cookies (homemade from scratch or from the refigerated rolls or purchased already baked)
Assorted sliced fruit (canned peaches, mandarin oranges, fresh grapes, fresh strawberries, fresh kiwi, bananas-whatever looks ripe & fresh)
For cream cheese mixture:
2 8 oz. packages cream cheese (not fat-free, it's too runny when whipped)
1 cup granulated sugar

For Orange Glaze
1 cup granulated sugar
4 Tablespoons cornstarch
dash salt
1 cup water
2 cup orange juice

Beat cream cheese with sugar and reserve. For glaze, mix sugar,cornstarch and salt in sauce pan
Slowly whisk in water and orange juice. Bring to a boil and continue cooking two minutes until thick. Cool. Frost cookies with cream cheese mixture. Arrange some slice fruit atop each cookie. Spoon glaze over cookies, making sure banana slice are covered in particular, as otherwise they will turn dark. Chill to set glaze. Whatever fruit and glaze is left over I toss together in a pretty bowl and serve as Fruit Pizza Salad.The cookies are best served on large flat platters, so fruit does not slide off the cookies. Place spatulas on the table next to the platters to serve these, they become slightly soft as the cream cheese soaks in, but are still very delicious. We had none left!
