Recipe(tried): Swedish Meatballs
Appetizers and Snacks Tishe,
I doubled this recipe, then had leftover meatballs as they did not all fit in the crockpot!
The original recipe from Favorite Recipes of the Serbian Sisters-Princess Zorka, a community-type cookbook I picked up at a yard sale does not call for the pork sausage, it's my addition. Hope you enjoy them-my sister-in-law is e-mailing me the cake recipe and I will post it as soon as I get it.
Easy Swedish Meat Balls
2 lbs ground beef
1 lb pork sausage
2 teaspoons salt
2 eggs
1 cup bread crumbs
1 cup milk
1 small onion, finely diced
Mix all ingredients well. (my stand-up electric mixer does this job in no time with a lot less mess than by hand, I use the paddle used for cookie dough).Form in small balls. (recipe now says to brwon in 3 Tablespoons oil, but I line the meatballs up on a rack sprayed with Pam in a large cookie sheet with sides sprayed with Pam and bake for about 15-20 minutes or until done in a preheated 400 oven). Test doneness by cutting one in half. Mix 2 cans of mushroom soup with 2 cans of water and pour over meatballs. Recipe says to simmer one hour. I wanted to make them ahead, so I froze them after baking in large freezer bags, put the bags in the refrigerator the day before the shower, then put them in the crockpot the morning of with the soup/milk mixture, turning on high 'till they got hot then turned down to low for the remainder of the party. (Alternately, you could reheat them in a 400 oven until hot, warm the soup/milk mixture in the crockpot then add the meatballs to the crockpot.) If you want more gravy, just add more soup and milk.
