Recipe: Perfection Salad (using orange Jell-O)

PERFECTION SALAD
(Adaptation of a very old recipe)

1 (3 ounce) package sugar-free orange gelatin
1 cup boiling water
1 cup cold water
1 teaspoon salt
1 tablespoon lemon juice
1 cup shredded cabbage
1/2 cup finely chopped celery
1/2 cup shredded carrots
1 tablespoon scallions, finely sliced

Dissolve the gelatin in 1 cup boiling water. Add the 1 cup cold water, salt and lemon juice. Chill.

When mixture is slightly thick, add the cabbage, celery, carrots and scallions.

If you want to "impress" the pour into 6 or 8 individual molds or ramekins and chill until firm. Garnish with a small "plop" of mayonnaise...this is very old-fashioned!

Makes 6 to 8 servings
