BANANA BREAD PIZZA
1 cup granulated sugar
1/3 cup shortening
2 eggs
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup mashed ripe banana (about 3 medium)
1 tsp vanilla extract
1/2 cup chopped walnuts
2 (8 oz each) packages cream cheese, softened
1 tsp confectioner's sugar (for garnish)
Preheat oven to 350 degrees F. Coat two 12-inch pizza pans with nonstick baking spray.
In a large bowl, with an electric mixer, cream together the granulated sugar and shortening until light and fluffy. Add the eggs and beat thoroughly. Gradually blend in the flour, baking soda,and salt. Beat in the mashed bananas and vanilla until smooth. Fold in the chopped walnuts. Spread the mixture onto prepared pans.
Bake for 12-15 minutes, or until a wooden toothpick inserted in the center comes out clean. Let cool 15 minutes.
In a medium bowl, beat the cream cheese until fluffy. Spread evenly over the top of one crust. Place the second crust, top side down, over the cream cheese.
Sprinkle with the confectioner's sugar, and serve, or cover and chill until ready to serve, then confectioner's sugar and cut.
Makes 12-16 slices
