Traditional Rice and beans
3 cups of 'leftover' cooked rice
3 cups cooked black beans
2 tablespoons onion, finely chopped
1 tablespoon green pepper, finely chopped
2 tablespoons fresh coriander, finely chopped
3 strips of bacon, cooked, crumbled
2 tablespoons oil
1/2 tb Worcestershire Sauce
1/2 tablespoon Tabasco (optional)
Saute the onion and green pepper in the oil on a medium setting. Then add the beans and cook for 2-3 minutes more. Add rice stir thoroughly. Cook for 3 more minutes, add the Worcester. sauce, Tabasco, and coriander. Stir thoroughly, then garnish with bacon crumbs. Makes 4-6 servings.
