SOUTHWESTERN CHIPOTLE BAKED BEANS
3 cups cooked great northern beans
FOR THE SAUCE:
3 canned chipotles in adobo, chopped (remove stems)
2 teaspoons New Mexican chile powder
2 tablespoons adobo sauce
1 large onion, chopped
2 cloves garlic, chopped
1 tablespoon vegetable oil
1/4 pound slab bacon, cut into 1/2 inch pieces
1/2 cup ketchup
1/2 cup beer (or water)
1/4 cup dark brown sugar
1 teaspoon dry mustard
Saute chipotles, onion, and garlic in oil until soft.
Combine with remaining ingredients for the sauce; mix into the beans. Place in a 1 1/2-quart casserole.
Bake at 325 degrees F for 2 hours, adding water if beans get too dry.
