CAPONATA,
is a side dish of Italian heritage which by now I assemble without a recipe, using the freshest vegetables and herbs, saut ed in a splash of white wine, olive oil and balsamico, with a tsp. of brown sugar to caramelize the vegetables, 2 crushed garlic cloves and salt and pepper to taste. A bit of Paprika might be added.
