Recipe(tried): gargie's BBQ sauce

I work in a gourmet restaurant in N.E Pa...This reciepe always gets rave revuz:1c ketchup (catsup)
1T garlic-minced
1T shallots(or red oninon) minced
2T cornstarch
water-to dissolve cornstarch
To taste-minced ginger
To taste-salt&pepper
1/4 c brandy(opt)
To taste-asst. aromatics (thyme, basil, etc...)

Method: in a saucepan, saute garlic, shallots, and seasonings in oil-no color. Add brandy (CAUTION:PAN WILL FLAME UP BIG TIME!!) and ketchup. dissolve cornstarch in water. after ketchup etc. boils, slowly whisk in dissolved cornstarch and thicken to desired consistancy. remove from heat and add remaining seasonings-tasting often. correct seasonings, consistancy and color if needed.
