I used to work for Luby's and this is their cookbook recipe - of course it is in restaurant quantity so you will have to reduce it accordingly.
LUBY'S BAKED SPINACH
2 (50 oz) cans condensed cream of celery soup
1 pint of milk
1/2 cup of finely grated onions
12 oz cream cheese, divided use
3 (3 lb) box of cooked and well drained spinach
salt to taste
Heat the 2 - 50 oz cans of celery soup, 1 pint of milk, 1/2 cup onions and 8 oz. of cream cheese in a thick metal pot until thoroughly blended. Add drained spinach to mixture and salt to taste. Place in three square pans an crumble the remaining 4 oz of cream cheese over the top of the spinach. Heat and serve.
