Recipe: Garlic and Egg Soup (Puerto Rican)
SoupsGARLIC AND EGG SOUP
3 tablespoons olive oil
6 cloves garlic
6 cups broth*
6 slices toast
6 eggs
Fry the garlic and when golden brown, remove from the oil and add broth.
When the broth boils add the eggs, one at a time and simmer to cook eggs.
Place a toast on each soup plate and place an egg on top of each toast, and pour over broth.
*Hot water seasoned with salt may be used in place of broth.
Servings: 6
