Recipe: Garlic Bread for Heather

Garlic Bread

2 to 10 cloves garlic, sliced or 1/2 teaspoon good quality garlic powder
1 to 2 teaspoons snipped fresh chives
1/2 cup butter or olive oil
1 loaf French bread

Chop garlic and put in measuring cup with butter and chives. Microwave on high 30 seconds to melt. Set aside.

Slice bread in half lengthwise and place on baking sheet. Brown under broiler for several minutes.

When ready to serve, spread with the butter mixture, or dip bread pieces into the mixture as it is eaten.

Garlic Bread
Serves 4 to 5
Makes 8 to 10 pieces

1 French or Italian bread Loaf
4 tsp Butter or Margarine
4 tsp Minced Garlic
1 tbsp Mixed Herbs
1 tbsp Parsley

Preheat your grill to a medium temperature.

Slice the French Stick along its length into a number of 10cm logs. Slice through each to create two half-cylindrical bread bases.

Cut a number of 1cm deep slits lengthwise along the cut surfaces of the bases.

For each base - Take a 1/2 tsp of butter or margarine and place in a dish or soup bowl and add 1/2 tsp of minced garlic. Mix the two together using a fork to create a creamy mixture; Garlic Butter.

Spread the Garlic Butter over the bread bases ensuring that the cut surface is well covered, and that the Garlic Butter is pushed well in to the slits. Freshly crushed garlic may be used instead of minced garlic.

Place the Garlic Bread on a grill pan with the buttered side down and place under a medium-hot grill until lightly toasted.

Turn the Garlic Bread over, sprinkly on a little Mixed Herb and/or some parsley, and replace under the grill until the buttered side is lightly toasted. It may be necessary to spread the Garlic Butter mix over the bread during cooking.

Remove from grill and serve while hot.
