BROCCOLI AND APPLE SAUTE
1 bunch broccoli, broken into florets, stems peeled and thinly sliced
2 tablespoons butter
1 large onion, coarsely chopped
2 cloves garlic, minced
1 tart apple, peeled and diced
In a large pot of boiling lightly salted water, boil broccoli until bright green and barely tender, about 3 minutes; drain well and blot dry.
Meanwhile, in a large skillet, melt butter over medium heat. Saute onion until tender.
Add garlic and apples to skillet; saute until apples are tender. Toss with broccoli.
Makes 4 servings
