GEORGIA CRACKER SALAD
4 ounces saltine crackers
1 cup mayonnaise
1 large tomato or 2 plum tomatoes, seeded and finely chopped
1 hard-cooked egg, finely chopped
3 scallions, finely chopped
Salt and freshly ground black pepper to taste.
Just before serving, place saltines in a medium-size bowl. Use your hands to crush crackers into big pieces.
Add remaining ingredients, mix gently but thoroughly, and season with salt and pepper.
Serve immediately as a side dish or top with shrimp to serve as an entree.
Yield: About 2 cups, or 6 servings
