Recipe: German Boiled Dinner with Mustard Butter Sauce (kielbasa, cabbage and potatoes)
Main Dishes - Pork, HamGERMAN BOILED DINNER
1 1/2 cups water
4 medium-small red potatoes (1 1/2 pounds)
1 1/4 pounds light kielbasa sausage
1 green cabbage (1 1/2 pounds)
Mustard Butter Sauce (optional, recipe follows)
Pour the water into a 4 1/2-quart Dutch oven or soup pot. Cover and bring it to a boil over high heat.
Meanwhile, wash the potatoes well and cut them in half, leaving the peels on. (The halves should be about an inch thick. If thicker, cut into thirds.) Cut the sausage into 4 pieces, and cut the cabbage into 4 wedges.
Arrange the potatoes, cut side down, in a circle around the pot bottom. Lay the sausages on top of the potatoes and place the cabbage on the very top.
Cover the pot and cook at a rolling boil for 15 minutes, or until the potatoes are tender. Meanwhile, microwave the Mustard Butter Sauce, if desired.
TO SERVE:
Place 2 potato halves, a sausage link and a cabbage wedge in each bowl. (Discard any water from the pot.) Drizzle 1 tablespoon mustard sauce over the vegetables, if desired.
MUSTARD BUTTER SAUCE
(makes 1/4 cup)
3 tablespoons butter or margarine
1 tablespoon German style or Dijon mustard
In a small bowl, melt the butter in the microwave on low power. (Cover the bowl with a paper towel to prevent spatters.) Whisk in the mustard, stirring until the sauce is smooth. Set aside until ready to serve.
Makes 4-6 servings
