Recipe(tried): Gina's Grand Chicken Salad and Crackers

Hi Everyone,

I have always loved chicken salad...and have been quite picky about it. First, it must be made with white chicken breast, and secondly, it has to be good.

Cubans make a most interesting chicken salad which I enjoy also, it is made with potatoes and has bits of apples in it. A most interesting combination and very pleasing to the palate. Usually this type of chicken salad is served for parties. I always look forward to it.

But my most favorite chicken salad is the one I am sharing with you. I like it with grapes and nuts in it to give it flavor and texture. After Thanksgiving, I always save some white turkey breast to make this exact salad but with the addition of dried cranberries in it. Oh, is that exquisite!

This was a welcome sight today as my Mom helped me mow the lawn today. After dipping ourselves in the pool to refresh ourselves after a long day of working outdooors, we were not that hungry, so this fit the bill perfectly.

Gina's Grand Chicken Salad

2 tablespoon mayonnaise
2 tablespoon sour cream
1/2 teaspoon ground ginger
1/2 teaspoon curry
1/4 teaspoon salt
1/4 teaspoon black pepper
2 boneless, skinless chicken breasts, pouched
1 cup seedless grapes, sliced in half
about 1 teaspoon grated onion
1/2 cup chopped celery
1/2 cup chopped pecans

Shred chicken after it has cooled off (I usually refrigerate it.) Place the chicken in a bowl, add the mayo, sour cream, seasonings, grated onion, grapes and nuts and begin blending together.

Serve with wheat crackers on a bed of lettuce.
