Recipe: Glazed Smoked Picnic (with Orange Marmalade Glaze)

GLAZED SMOKED PICNIC

1 (5-7 lb) smoked picnic (pork shoulder)
1 carrot
1 onion
1 stalk celery
1 bay leaf
FOR THE ORANGE-MARMALADE GLAZE:
1/4 cup packed light brown sugar
1/4 cup orange marmalade
1 tsp dry mustard

Put meat, fat side up, in large kettle and cover with cold water. Bring to boil and add next 4 ingredients. Cover and simmer 2 1/2 to 3 hours.

Mix the glaze ingredients together; set aside.

Remove meat from broth, take off rind and set meat, fat side up, on rack in shallow roasting pan. Score fat n diamonds or other shapes and spread with glaze.

Bake at 350 degrees F about 20 minutes.
