SAVORY SUPPER MEATBALLS
1 pound ground pork
1/4 cup chopped onion
1 egg
1/2 cup instant oatmeal
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 teaspoons mustard
1/2 cup milk
3 to 4 tablespoons ketchup
Heat oven to 350 degrees F.
Put pork in a large bowl, add all other ingredients except ketchup. With clean hands, mix together all ingredients thoroughly - this will take a few minutes to make sure everything is well blended.
Spoon equal portions into 8 muffin cups. Top each muffin with a teaspoon or so of ketchup.
Bake for 25 minutes.
Serve warm with more catsup, if desired.
These meatballs are fun and easy made in a muffin tin. Kids can make these as part of a family dinner. Makes a great snack, a lunch, or a family dinner when served with a green vegetable, hot rice, a fruit salad and dinner rolls.
