Recipe(tried): Goetta ala Windholtz -- Cincinnati OH

Main Dishes - Pork, Ham
Goetta ala Windholtz

5 1/2 pounds boiled pork tips
5 medium to large onions
5 or 6 bay leaves

Cook in enough water to cover meat until done (approx 1 hour). Remove meat from broth and cool to remove fat from top of the broth.

Add:
2 cups Pin Oats (cook in broth from meat & onions) additional water may need to be added to the broth to cook the Pin Oats (Check Pin Oats package for directions).
4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon sage
1 teaspoon parsley
1/2 teaspoon thyme
1/2 teaspoon allspice

Cook 1 hour over LOW heat stirring very often.

Place in bread pans (any size) and refrigerate to completely cool.

Slice and brown in skillet till crispy outside. May be frozen and browned at a later date for future use if desierd.
