GOLDEN APPLE MOSAIC PIE
1 (9-inch) pastry shell
1 egg, separated
1/2 cup sugar
2 tablespoons flour
1/8 teaspoon salt
1 cup dairy sour cream
1 teaspoon vanilla
4 cups pared, cored and chopped Golden Delicious apples
Streusel Topping (recipe follows)
Brush pastry shell with beaten egg white; reserve remaining egg white. Bake at 375 degrees F for 7 minutes.
Combine sugar, flour and salt. Stir in sour cream, remainder of egg white, yolk and vanilla; beat until smooth. Stir in apples; pour into partially baked pastry shell.
Bake at 375 degrees F for 45 minutes. Spread Streusel Topping over apples. Bake 15 minutes longer or until knife inserted near center comes out clean.
Serve warm or chilled.
STREUSEL TOPPING

1/4 cup butter or margarine
Combine sugar, flour, and cinnamon. Cut in butter until crumbly. Makes 1 cup.
