Recipe: Golden Ginger Punch

GOLDEN GINGER PUNCH

6 ounces fresh ginger, plus 1/2 cup fresh ginger matchsticks, for garnish
4 quarts pineapple juice, preferably fresh (from about 8 pineapples)
1 bottle (750 ml) vodka

Puree the 6 ounces of ginger in a food processor. Scrape the ginger into a fine sieve set over a small bowl and press hard to extract the juice. Discard the solids.

In a large punch bowl, stir together the pineapple juice, vodka and ginger juice. Add the ginger matchsticks and serve in tall glasses over ice.

SERVES: 30
