Gorgonzola Mushroom Sauce

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup pancetta or bacon -- diced
6 cups mushrooms -- chopped
1/3 cup shallots -- minced
2 cups heavy cream
2 tablespoons chopped fresh parsley
1/3 cup Gorgonzola cheese

Saute pancetta or bacon. Drain all but 2 tbl. drippings. Add mushrooms and
shallots. Add cream and parsley. Simmer until cream is reduced by almost half.
Remove from heat and add cheese. Serve over ravioli or tortellini.
