I, too, grew up in El Paso and crave Chico's Tacos! The cheese is probably American or Velvetta and it's always grated/shredded thin. I'm also inclined to think the closest red sauce recipe is from Jenny in New Mexico. Chico's red sauce is rather watery, yet it tastes great & the ingredients are well-blended, or pureed. The tacos are made from corn tortillas, filled with a small amount of cooked or boiled ground beef, then rolled thin and deep fried. The tacos swim in red sauce & they're topped with a mound of shredded cheese.
