Okay folks, this is my Grandmother's Cincinnati Chili recipe. She makes this every time I return to the land of my birth up North. My Mum makes it too, but it is always better when Gran makes it.(Don't tell mum)
Granny's Cincinnati Chili
2 tablespoons vegetable oil
1 & 1/2 cups chopped yellow onion (divided)
1 pound ground beef
2 tablespoons unsweetened cocoa
2 teaspoon chili powder
1/2 teaspoon ground cayenne
1/4 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1 28oz can whole tomatoes
1 6oz can tomato paste
1/2 cup water
12 oz uncooked spaghetti
1 15oz can kidney beans (drained)
shredded cheddar cheese
In a large sauce pan heat oil. Cook 1/2 cup onion until tender. Add beef, cook until beef is done. Add cocoa, spiced, tomatoes, and water; heat to boiling. Meanwhile cook spaghetti.
Serve chili over spaghetti. Add onions, cheese, and beans as you wish.
I have tried adding cardamom to the spice mixture. I liked it, but my wife preferred it without. It ain't Skyline but it tastes like home.
