Recipe: Grape Nuts Bread (8)

GRAPE NUTS LOAF
2 eggs, beaten
1 c. Grape Nuts cereal
1 1/2 c. milk
1 tsp. salt
3/4 c. chopped walnuts
1 tbsp. chopped onion
1 c. chopped celery
2 tbsp. margarine
Mix and let stand 20 minutes. Place in oiled loaf pan and bake 40 minutes at 350 degrees.


GRAPE NUTS BREAD
1/2 c. Grape Nuts cereal
1 c. buttermilk (or sour milk)
1/2 c. brown sugar
2 c. flour, sifted
1 tsp. baking powder
1/2 tsp. soda
1 egg, beaten well
1/4 tsp. salt
1 tsp. melted butter
Soak Grape Nuts an hour in the cup of buttermilk. Then add egg and sugar. Combine flour, baking powder, soda and salt and stir into mixture along with the teaspoon of melted butter. Mix well. Pour into a greased loaf pan and bake in 350 degrees oven for 45-50 minutes.


GRAPE NUT BREAD
1 c. Grape Nuts
1 1/2 c. milk
1 egg, beaten
1/2 c. sugar
2 tbsp. butter
1/2 c. walnuts
1 c. flour
1/2 tsp. soda
1/2 tsp. salt
2 tsp. baking powder
Soak Grape Nuts in milk for 1/2 hour then add beaten egg, sugar, butter and walnuts. Sift together remaining ingredients. If needed, add enough flour to make batter the same as cake batter. Bake at 350 degrees.


BANANA BREAD WITH GRAPE-NUTS
1 3/4 c. flour
1 c. sugar
2 1/2 tsp. baking powder
1 tsp. salt
3/4 c. Grape-Nuts
1 c. mashed banana
1/2 c. milk
1 well-beaten egg
2 tbsp. oil
Mix flour, sugar, baking powder and salt. Stir in cereal. Combine banana, milk, egg and oil. Add flour mixture, stirring until flour is just moistened. Pour into greased 9x5 inch pan or 3 small loaf pans. Bake at 350 degrees for 1 hour or until tests done. Cool in pan 10 minutes. Remove from pan and cool on rack.

APRICOT BREAD
1 1/2 c. flour
1/2 c. sugar
1 tsp. salt
1/2 tsp. baking powder
3/4 c. Grape Nuts
2/3 c. dried apricots, chopped
1 c. whole or skim milk
1 egg
1/4 c. oil
Preheat oven to 350 degrees. 1. Mix together flour, sugar, salt and baking power. 2. Stir in Grape Nuts and apricots. 3. Mix milk, egg and oil. Add to flour mix. Stir 20 seconds or until just moistened. 4. Pour into greased loaf pan. Bake 60 minutes or until toothpick comes out clean.


SHREDDED WHEAT BREAD
1/4 c. shredded wheat biscuits
1/4 c. grape nuts (cereal)
1/2 c. molasses
1/2 c. shortening
1/2 c. brown sugar
1 tsp. salt
2 c. boiling water
2 c. scalded milk
2 pkgs. dry yeast
8 c. white flour
In a large pan combine shredded wheat biscuit (crumbled), grape nuts, molasses, shortening, brown sugar and salt. Stir in boiling water. Let stand 10 minutes. Allow scalded milk to cool to lukewarm and stir in yeast until dissolved. Stir milk-yeast into shredded wheat mixture. Gradually add flour until dough becomes stiff. Place on floured surface and knead 8-10 minutes. Place in greased bowl in a warm location and let rise until double in bulk. Punch down and shape into three loaves. Place in greased 9x5 loaf pans and let rise to tops of pans. Bake in moderate (350 degree) oven 35-40 minutes. NOTE: This is one of my Mother's well used recipes. Tasted so good warm from the oven!


GRAPE-NUTS APPLE BREAD
2 c. sifted all-purpose flour
2 1/2 tsp. baking powder
1 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. allspice
1/2 c. Grape-nuts flaked
1 c. finely peeled & chopped cooking
apples
2/3 c. packed light brown sugar
1/2 c. chopped nuts
2 eggs, well beaten
2/3 c. milk
2 tbsp. molasses
1/4 c. shortening, melted & cooled
Sift together flour, baking powder, salt and spices into mixing bowl. Stir in brown sugar, cereal, apples and nuts. Combine eggs, milk, molasses and shortening. Add egg mixture to flour mixture and blend just until all flour is dampened. Pour into well greased 8 x 4 x 3 inch loaf pan. Bake in 350 degree oven for 60-65 minutes. Cool 10 minutes and turn out on cake rack. When bread is cool wrap in waxed paper, transparent wrap or aluminum foil. For best slicing and mellowing of flavors, store overnight.


QUICK AND EASY "NUTLESS" NUT BREAD
1 1/3 c. milk, scalded
1 egg, well beaten
3 tbsp. shortening, melted and cooled
2 c. sifted flour
2 1/2 tsp. baking powder
1 tsp. salt
2/3 c. firmly packed brown sugar
2/3 c. Grape Nuts cereal
Preheat oven to 350 degrees. Grease 8 x 4 x 3 inch loaf pan. Scald milk and pour over Grape Nuts; let cool. Mix in 1 well beaten egg and shortening. Mix dry ingredients and add to cereal mixture. Stir just enough to dampen the flour. Pour into pan (batter will be very stiff). Bake at 350 degrees for 50 to 60 minutes. Cool 10 to 15 minutes. Wrap in foil and store overnight.
